Ingredients:
100gr winter purslane
150gr black quinoa
10 g parsley
4 tbsp sunflower seeds
200gr soybean curd
800 gr watermelon

marinade:
1 inch peeled ginger
1 lime juice and zest
pinch chili pepper
60ml rice vinegar
80 ml soy sauce
3 tbsp sesame oil
2 tbsp olive oil
20 ml 7M probiotics

tile:
3 tbsp sunflower oil
15 g rice flour
1 the cornstarch
30 ml beetroot juice
10 ml soy sauce
60 ml water

dressing:
2 tsp fine mustard
2 tsp agave syrup
1 tsp coarsely ground pepper
4 tbsp rice vinegar
4 tbsp olive oil
pinch of salt

 

Method of preparation

1: cook the quinoa, when done (approx. 10 minutes) drain in a sieve and rinse it cold, let it drain well.

2: Make the marinade for the melon by mixing all the ingredients in the food processor. Cut the watermelon into triangular pieces and marinate for 1 hour or more.

3: Put all the ingredients for the tuile in a measuring cup and mix it into a smooth, thin batter with a hand blender. Bake in a dry frying pan (non-stick) small biscuits, on both sides.

4: For the dressing, mix the mustard, agave, pepper and salt together, and add the oil while stirring.

5: Cut the parsley and mix it with the quinoa and half of the dressing.

6: Garnish the winter purslane with the rest of the dressing.

7: Build up the salad with first a part of purslane, then the quinoa, then the watermelon, again purslane and finish it with soy yogurt and pumpkin seeds.
