Ingredients
1 liter of boiling water
6 grams of clam flour
6 tbsp cane sugar
10gr twigs of tarragon
zest of 1 lemon
200 grams of blueberries
2 tbsp agave syrup
splash of lemon juice
crushed ice
20 ml 7M
Preparation method:
1: Put on a liter of water and bring to a boil.
2: When it boils, add the cling flower and let it steep for 5 minutes.
3: Put the tea in a measuring cup and add the zest of the lemon, as well as the cane sugar, 7M and tarragon. Put this in the fridge.
4: For the granita: put the blueberries in a saucepan with 160 ml water, a dash of lemon juice and 2 tbsp agave syrup. Bring to boil. When it boils, turn off the heat, puree the mixture and strain it until smooth.
5: Then spread it on a plate / flat tray and place in the freezer for 45 minutes, or until frozen.
6: Just before serving: put about 15 ice cubes in a tea towel and fold. Break the ice cubes into crushed ice with a rolling pin or saucepan.
7: Strain the tarragon and lemon zest from the iced tea.
8: Divide the crushed ice over 4 glasses and pour the iced tea on top.
8: Take the blueberry granita out of the freezer and scrape it with a fork to get an airy structure. Top the iced tea with the granita and finish with tarragon sprigs.
